Streusel

I throw this on muffins, breakfast bars, fruit crisps and free form tarts.

Makes 4 cups streusel. Can be stored in the freezer.

Combine in a mixer with the paddle attachment:

  • 1 1/4 cup flour

  • 1 cup oats

  • 1 cup brown sugar

  • 1/2 t salt

  • 1 T cinnamon

  • 1/2 t nutmeg

Add and mix slowly for 2-3 minutes:

  • 1/2 cup (1 stick) cold, unsalted butter, cut into cubes

Mix until the butter is incorporated. Stop every minute or so and squeeze a handful of the streusel. If it holds together in a clump it's ready. If it falls apart like loose sand mix for another minute. Stay close by though - you don't want to overdo it.
